Crispy Broccoli and Shrimp Stir-fry
Nutritious Broccoli and Shrimp Stir-fry Recipe

Main Ingredients- 1 head of broccoli (approx. 200g)
- 50g peeled and deveined shrimp (e.g., cocktail shrimp)
Seasoning Ingredients- 1 Tbsp cooking oil (approx. 15ml)
- 1 Tbsp cooking wine (mirin or sake) (approx. 15ml)
- 1 Tbsp minced garlic (approx. 10g)
- 1 Tbsp soy sauce (approx. 15ml)
- 1 tsp oyster sauce (approx. 5ml)
- 1 tsp sugar (approx. 5g)
- 1 tsp chicken stock or water (approx. 5ml, for enhanced flavor)
- Pinch of ground black pepper
- A drizzle of sesame oil
- 1 tsp cornstarch mixed with 1 Tbsp water (for thickening, optional)
- 1 Tbsp cooking oil (approx. 15ml)
- 1 Tbsp cooking wine (mirin or sake) (approx. 15ml)

- 1 Tbsp soy sauce (approx. 15ml)
- 1 tsp oyster sauce (approx. 5ml)
- 1 tsp sugar (approx. 5g)
- 1 tsp chicken stock or water (approx. 5ml, for enhanced flavor)
- Pinch of ground black pepper
- A drizzle of sesame oil
- 1 tsp cornstarch mixed with 1 Tbsp water (for thickening, optional)
Cooking Instructions
Step 1
First, separate the broccoli into bite-sized florets. For the thicker stems, peel off the tough outer skin and then cut the inner stem into 1cm cubes. The stems are also nutritious and have a great texture, so don’t discard them!

Step 2
Bring a pot of water to a boil and add a pinch of salt (about 1/2 tsp). Blanch the prepared broccoli florets for about 30 seconds to 1 minute. Be careful not to overcook, as they can become mushy. Immediately transfer the blanched broccoli to a bowl of cold water to stop the cooking process, then drain and set aside. Briefly blanch the shrimp in the boiling water until they turn pink, then drain.

Step 3
Heat 1 Tbsp of cooking oil in a pan over medium-low heat. Add 1 Tbsp of minced garlic and sauté until fragrant, about 1-2 minutes. Ensure the garlic doesn’t burn. Once fragrant, add 1 Tbsp of cooking wine (mirin or sake) and stir-fry for another 30 seconds to cook off any raw alcohol smell.

Step 4
Add the blanched shrimp to the pan. Pour in 1 Tbsp of soy sauce and 1 tsp of oyster sauce. Stir-fry quickly for about 1 minute, allowing the shrimp to absorb the flavors and develop a nice color.

Step 5
Now, add the prepared broccoli florets to the pan and stir-fry them with the shrimp.

Step 6
Increase the heat to high. Stir-fry briskly, ensuring the broccoli doesn’t get crushed. The key is to maintain the broccoli’s crisp texture.

Step 7
Pour in about 1/2 ladle (approx. 100ml) of chicken stock or water. Add 1 tsp of sugar and 1 tsp of chicken stock (optional, for extra flavor) and stir to combine. Bring the mixture to a gentle simmer.

Step 8
Once the sauce starts to bubble, sprinkle in a pinch of black pepper for aroma. If you prefer a thicker sauce, slowly drizzle in the cornstarch slurry (1 tsp cornstarch mixed with 1 Tbsp water) while stirring constantly until the sauce reaches your desired consistency. This will give the sauce a glossy finish.

Step 9
Just before turning off the heat, drizzle in a little sesame oil for a nutty aroma. Adding sesame oil at the end helps preserve its fragrance.

Step 10
Transfer the finished broccoli and shrimp stir-fry to a serving plate. This flavorful and vibrant dish is perfect served hot with steamed rice.
