- 1 Tbsp Mirin (or Rice Wine)
- 1.5 Tbsp Vinegar
- 0.5 Tbsp Soy Sauce
- 1 Tbsp Sugar
- 1 tsp Minced Garlic

Cooking Instructions
Step 1
Using a knife, carefully peel off the tough, fibrous outer skin of the broccoli stem. Continue peeling until you expose the lighter green inner part.
Step 2
Rinse the peeled broccoli stem thoroughly under running water. Then, thinly slice it into julienne strips, about 0.3 cm thick. Aim for strips that retain a bit of texture, rather than being paper-thin.
Step 3
Bring a pot of water (about 1 liter) to a rolling boil over high heat, adding 1 teaspoon of coarse salt. Once boiling, add the julienned broccoli stems and blanch for just 30 seconds. This quick blanching will keep the stems wonderfully crisp while removing any slight bitterness.
Step 4
Gently shred the 3 crab sticks into bite-sized pieces. You can do this by hand, tearing them into 3-4 segments. Tearing them to maintain some texture will add to the overall mouthfeel.
Step 5
In a mixing bowl, combine 1 tablespoon of mirin, 1.5 tablespoons of vinegar, 0.5 tablespoon of soy sauce, 1 tablespoon of sugar, and 1 teaspoon of minced garlic. Whisk everything together until the sugar is dissolved and you have a smooth dressing.

Add the blanched and well-drained broccoli stems and the shredded crab sticks to the bowl with the dressing. Gently toss and mix everything together with your hands until well combined and coated with the dressing. Be careful not to overmix, as this can mash the ingredients.
