Crispy Burdock Kimchi: A Healthy and Flavorful Special Side Dish!
Healthy Kimchi You Can Enjoy as a Special Dish: Making Crispy Burdock Kimchi
Hello everyone! Today, I’m excited to introduce a rather unique kimchi to you all. It’s ‘Burdock Kimchi’! While it might not be overwhelmingly spicy or intensely flavored at first bite, it has a charming quality that makes you feel healthier with every mouthful. Its crisp texture, subtle sweetness, and savory depth make it an absolute rice thief! If you’re tired of ordinary kimchi, be sure to give this a try today!
Kimchi Ingredients
- 2 strips of burdock root (approx. 200g)
- 1 cup glutinous rice paste (approx. 200ml)
- 1 Tbsp minced garlic
- ½ Tbsp minced ginger
- ½ cup anchovy sauce (approx. 100ml)
- 1 cup red pepper flakes (approx. 100g)
- 3 Tbsp plum extract
Cooking Instructions
Step 1
First, thoroughly peel the burdock root using a vegetable peeler. Make sure to scrape off any dirt diligently, as burdock can be quite earthy.
Step 2
Cut the peeled burdock into lengths about the thickness of your middle finger. Then, slice them thinly sideways into pieces about 3-5mm thick. Slicing them to this optimal thickness ensures they absorb the seasoning well and have a satisfying texture.
Step 3
Prepare a salt brine by dissolving half a cup of water with salt in a large bowl. Submerge the sliced burdock in the brine for about 30 minutes. This process wilts the burdock and removes any bitterness.
Step 4
After brining, drain the burdock well using a colander. Be gentle to avoid breaking the pieces as you let the water drip off.
Step 5
Use paper towels to thoroughly pat dry any remaining moisture from the burdock. Ensuring the burdock is completely dry is crucial for proper seasoning adherence and longer shelf life.
Step 6
Now, let’s make the delicious kimchi seasoning! In a bowl, combine 1 cup of glutinous rice paste, 1 tablespoon of minced garlic, ½ tablespoon of minced ginger, and ½ cup of anchovy sauce. Mix them well.
Step 7
Add 1 cup of red pepper flakes and 3 tablespoons of plum extract to the mixture to complete the basic seasoning paste. Then, add the drained and dried burdock and mix everything together until well coated.
Step 8
Since burdock is a firm ingredient, instead of gently tossing it, it’s best to ‘knead’ or ‘work’ the seasoning into the burdock thoroughly. This ensures the flavors penetrate deeply, making the kimchi even more delicious.
Step 9
The appearance of this burdock kimchi might remind you of seasoned deodeok (a type of root vegetable). However, unlike deodeok dishes, burdock kimchi does not typically include red chili paste. It achieves its deep savory flavor without it!
Step 10
Finally, taste the kimchi and adjust the seasoning if needed, primarily using more anchovy sauce to enhance the savory notes. The anchovy sauce will elevate the overall flavor profile of the kimchi.
Step 11
Serve the finished burdock kimchi appealingly on a plate and sprinkle with sesame seeds for a beautiful presentation! Experience the excitement of trying something new. Place a spoonful of rice with a bit of this burdock kimchi, and you’ll be greeted by the crisp texture and a subtle, savory anchovy aroma. It’s a truly remarkable taste that you won’t forget!
