We’ve transformed burdock root, with its wonderfully crisp texture, into a delicious salad similar to lotus root salad, generously seasoned with nutty sesame and creamy mayonnaise. It’s a perfect side dish for rice or a light, refreshing salad.

  • 1 piece Burdock Root (approx. 200g)
  • 1/2 Scallion
  • 2 Tbsp Sesame Seeds
  • 1/2 Tbsp Lemon Juice (or 1/2-1 Tbsp Vinegar)
  • 2 Tbsp Mirin (Sweet Rice Wine)
  • 1 Tbsp Sugar
  • 3 Tbsp Soy Sauce
  • 1 Tbsp Mayonnaise

First, gently scrape off the outer skin of the burdock root with the back of a knife. Wash it thoroughly under running water to remove any dirt or debris. It’s important to wash it meticulously.

Once washed, thinly julienne the burdock root into approximately 0.3cm thick strips. If you’re not using it immediately, soak the julienned burdock in water with a little vinegar to prevent browning.

Wash the scallion halves and thinly slice them diagonally for a more appealing presentation.

Blanch the julienned burdock in boiling water for just 1-2 minutes. As soon as the burdock starts to turn translucent, immediately remove it, rinse in cold water, and drain well. This ensures a crisp texture. Be careful not to overcook it, as it can become mushy.

To bring out the full nutty flavor, finely grind the sesame seeds using a mortar and pestle or a sesame grinder. If you don’t have these tools, using pre-ground sesame paste (sesame sauce) is a convenient alternative.
