  • 100g mushrooms (shiitake or king oyster, about 1 cup)
  • 1 stalk of green onion (white part, approx. 50g)
  • 3 Tbsp cooking oil

First, wash the 3 cabbage leaves thoroughly, remove the core, and thinly slice them into strips about 0.5cm thick. Prepare the mushrooms by removing the stems and slicing them to your preferred size, either diced or thinly sliced. Finely chop the white parts of the green onion.

Heat 3 tablespoons of cooking oil in a wide pan or wok over medium-low heat. Add the chopped green onions and sauté for about 1 minute until fragrant, being careful not to burn them. Once the aroma of the green onion oil is released, your pan is ready for stir-frying!

Now, add the sliced cabbage to the pan and stir-fry quickly over high heat for 1-2 minutes. Stir-frying until the cabbage becomes slightly translucent and starts to wilt will help maintain its crisp texture.

While the cabbage is cooking, add the prepared mushrooms to the pan. Continue to stir-fry over high heat for another 1-2 minutes until the mushrooms release their moisture and their flavor intensifies. Mix well to combine the cabbage and mushrooms.

Drizzle 2 tablespoons of oyster sauce over the stir-fried vegetables – this is the key to the flavor! Gently mix with a spatula for about 30 seconds, coating the vegetables in the savory sauce. Adjust the heat to prevent burning.
