Crispy Cabbage and Fluffy Egg Street Toast

There were many mornings when I skipped breakfast and rushed to work. I used to always buy a street toast from a vendor near the subway station, whose stall always had a wonderfully savory aroma. You might know the taste, but oh my, it’s incredibly delicious! A freshly made toast is simply the best in the world! It’s simple yet satisfying, making it a great way to start the day. This street toast is also a perfect snack! Let’s make today’s dish: Street Toast!
Ingredients
- 3 slices of bread
- 3 eggs
- 3 strips of bacon
- 2 handfuls of cabbage (about 1/4 medium cabbage)
- 1 tsp salt
- 1 Tbsp sugar
- Cooking oil
- 3 slices of butter
- Ketchup
Cooking Instructions
Step 1
Wash the cabbage thoroughly, pat it dry, and then thinly shred it. Slicing it at a slight angle can make the texture even softer.
Step 2
In a bowl, crack 3 eggs. Add 1 Tbsp of sugar to help eliminate any eggy odor.
Step 3
Add 1 tsp of salt and whisk the eggs, sugar, and salt together until well combined.

Add the shredded cabbage to the egg mixture and mix well with chopsticks or a fork, ensuring the cabbage is evenly coated with the egg.
Step 5
Heat a frying pan with a generous amount of cooking oil over medium-low heat. Ladle in a portion of the cabbage and egg mixture, spreading it thinly across the pan. Cook until golden brown on both sides, creating an egg pancake. Prepare three such pancakes.

In a separate pan, cook the bacon strips over medium heat, flipping them occasionally until they are crispy and the excess fat has rendered out.

Wipe the first pan clean. Add 1 slice of butter and let it melt. Place a slice of bread in the pan and toast it until golden brown on both sides, infusing it with a delicious buttery flavor. Toast all three slices of bread.

Take one slice of toasted bread, either cut it in half or leave it whole, and place one of the cooked cabbage and egg pancakes on top.

Lightly sprinkle a little more sugar over the egg pancake, if desired, to enhance the sweetness.

Tip: You can also skip cutting the bread in half. Instead, place the egg pancake and bacon on a whole slice of bread, then fold the bread in half to create a convenient half-moon shape.
