  • 1 small can Tuna (drained)
  • A little Green Onion (chopped)
  • 1 Korean Green Chili Pepper (seeds removed, chopped)
  • A little Cooking Oil
  • 1 Tbsp Baking Soda
  • 2 Tbsp Vinegar

Seasoning

  • A pinch of Salt (to taste)
  • A pinch of Black Pepper
  • A little Sesame Seeds
  • Sesame Oil or Perilla Oil (to taste)

Cooking Instructions

First, prepare about 2 cups of fresh cabbage. Wash it thoroughly and then slice it into chunky pieces, about 1 to 1.5 cm thick. Cutting it slightly thicker will help maintain a pleasant crisp texture.

Place the sliced cabbage in a bowl and add enough water to cover it. Sprinkle in 1 tablespoon of baking soda and gently toss the cabbage to ensure it’s well washed. This step helps remove any slight bitterness or unwanted odors from the cabbage. After washing, immerse the cabbage in a bowl of cold water with 2 tablespoons of vinegar for about 5 minutes. This soaking process further softens the cabbage and enhances its texture. Rinse it thoroughly under running water and pat it dry to remove excess moisture. Ensuring the cabbage is well-drained is key to preventing a watery stir-fry.

Chop the green onion, using both the white and green parts, and set aside. Finely chop the Korean green chili pepper after removing the seeds to add a touch of heat. Carefully drain all the oil from the canned tuna; this step is important to avoid making the dish too greasy.
