For breakfast, toast a slice of bread, top it generously with the cabbage rape for an open-faced sandwich that perfectly balances vegetables and carbohydrates. Add a fried egg for a boost of protein! This convenient and zesty cabbage rape piled high on toast makes a single slice incredibly filling. The crisp cabbage combined with the olive oil and mustard dressing creates a truly healthy and delicious sandwich. It’s best to make rape fresh as needed rather than storing it for too long. Cabbage Rape Ingredients- 300g cabbage (approx. 1/4 to 1/5 of a head)
- 2 Tbsp olive oil
- 1.5 Tbsp lemon juice
- 1 Tbsp whole grain mustard
- 0.5 Tbsp sugar
- 1 tsp honey (standard teaspoon, not measuring spoon)
- 0.5 tsp salt (standard teaspoon)
- Pinch of black pepper

- 2 Tbsp vinegar

- Jam (to taste)

Cooking Instructions
Step 1
First, cut off the four sides of the cabbage core. This makes it easier to separate the leaves.

About a quarter to a fifth of a cabbage head (roughly 1/4 to 1/5 of the whole) weighs around 300g. This is the perfect amount for your rape.
Step 3
Separate the cabbage leaves and soak them in water mixed with 2 tablespoons of vinegar for about 10 minutes to sanitize them. This ensures they are safe and clean to eat.

Rinse the sanitized cabbage leaves thoroughly under running water. Then, drain them well in a colander. Properly draining the water is key to preventing the rape from becoming watery or bland.

Prepare all the ingredients for the cabbage rape dressing: olive oil, lemon juice, whole grain mustard, sugar, honey, salt, and pepper.
