Ingredients- 300g Cabbage (about 1/4 of a medium head)
- 2 Tbsp Whole Perilla Seeds
- 1 Tbsp Perilla Oil (Deulgireum)
- 1/2 Tbsp Fish Sauce (or Soy Sauce/Anchovy Sauce)
- Pinch of Salt (to taste)

Step 1
Begin by preparing 300g of fresh cabbage. Using a knife, thinly shred the cabbage. Aim for a thickness of about 2-3mm; too thick and the texture might be less pleasant, too thin and it could become mushy. Once shredded, rinse the cabbage thoroughly under cold running water 2-3 times. This process helps remove any raw, ‘green’ flavor and enhances its crispness.
Step 2
Lightly drain the excess water from the rinsed cabbage and place it in a microwave-safe bowl. Cover the bowl with plastic wrap or a lid, leaving it slightly ajar, and microwave for about 2-3 minutes. The key is to just soften the cabbage slightly, not to overcook it, as this will make it mushy. You want it to retain a pleasant tenderness while remaining moist.

Once out of the microwave, let the cabbage cool slightly.
