Unique Cheese Potato Pancakes Using Shredded Potatoes
A unique take on potato pancakes, inspired by the Swiss dish Rösti! These are wonderfully crispy on the outside and tender on the inside, making them a delightful snack or appetizer.
Ingredients- 1 medium potato
- 2 slices bacon
- 2 Tbsp mozzarella cheese
- 1 Tbsp butter
- Vegetable oil, for frying
- Salt, to taste
- Pepper, to taste
Cooking Instructions
Step 1
First, peel the potato and then shred it into very thin strips. Placing the shredded potatoes in cold water for about 5 minutes helps to remove excess starch, which will result in a crispier pancake. After soaking, drain the potatoes thoroughly in a sieve, pressing gently to remove as much water as possible. Ensuring the potatoes are dry is key to achieving a crispy texture.
Step 2
Cut the bacon slices into small rectangular pieces, about 1-1.5 cm wide. This size ensures that the bacon is well distributed throughout the potato pancake and complements the potato’s texture.
Step 3
To the drained shredded potatoes, add salt and pepper according to your preference. I used about 2 teaspoons of salt and 2g of pepper for a balanced flavor. Then, add the cut bacon pieces and mix everything gently. The saltiness of the bacon will contribute to the overall seasoning of the pancake.
Step 4
Now, let’s cook the pancake. Heat a frying pan over medium-high heat. Add a generous amount of vegetable oil and 1 tablespoon of butter. Butter adds a wonderful richness and flavor. Once the pan is hot, carefully place the shredded potato and bacon mixture into the pan, forming a pancake shape. Fry until the bottom is golden brown and crispy. Once crispy, carefully flip the pancake. Reduce the heat to medium and continue cooking until the other side is also golden brown and the pancake is cooked through.
Step 5
When the potato pancake is almost done, sprinkle 2 tablespoons of mozzarella cheese over the center. Once the cheese begins to melt, carefully fold the pancake in half, enclosing the cheese. Remove the folded pancake from the pan and place it on a serving plate. You can cut it in half again for easier serving. Enjoy this crispy, cheesy delight immediately while it’s warm!
