Main Ingredients- Fresh chives 70g
- Vegetable oil for frying, as needed
Donut Dough- Bread flour 400g
- Granulated sugar 50g
- Melted unsalted butter 90g
- Warm milk 110ml
- 1 large egg, at room temperature
- Salt 5g
- Instant dry yeast 8g
- Vanilla extract, a little
Finishing Topping- Granulated sugar 1/2 cup
- Ground cinnamon 0.5 tablespoon
- Bread flour 400g

Cooking Instructions
Step 1
Gather all the ingredients needed to make these delicious chive donuts. Ensure your chives are washed and patted dry before measuring.

Roughly chop 50g of the chives into approximately 2-3 cm pieces. These will be blended into the dough.

In a blender, combine the roughly chopped chives and 110ml of warm milk. Blend until very smooth, ensuring there are no large lumps. This creates your chive puree.

In a large mixing bowl, add the bread flour (400g), granulated sugar (50g), salt (5g), and instant dry yeast (8g). Whisk them together briefly. Then, sift this mixture 3-4 times to aerate the flour and create a lighter dough.

Make a well in the center of the sifted dry ingredients. Pour in the blended chive puree, the room-temperature egg, the melted butter (90g), and a little vanilla extract.

Using a spatula or dough scraper, mix everything together until just combined and no dry flour remains. Once it starts to form a cohesive dough, turn it out onto a clean surface and knead by hand until it becomes smooth and elastic. Avoid over-kneading.

Place the kneaded dough in a lightly oiled bowl, cover it with plastic wrap, and let it proof in a warm place for about 1 hour, or until it has doubled in size (first rise).

While the dough is proofing, finely chop the remaining 20g of chives. Mince them as small as possible to distribute evenly throughout the dough and add a pleasant texture.

Once the dough has finished its first rise, gently punch it down to release the gases. Add the finely chopped chives to the dough.

Carefully fold the chives into the dough until they are evenly distributed. Be gentle to avoid overworking the dough at this stage. Cover the bowl again with plastic wrap and let it proof for about 30 minutes in a warm place (second rise).

Lightly dust your work surface with flour. Gently place the proofed dough onto the floured surface and use a rolling pin to flatten it into an even thickness of about 0.5 cm (approximately 1/4 inch).

Using a round cookie cutter (about 7-8 cm in diameter), cut out donut shapes from the flattened dough. Then, use a smaller circular object, like a bottle cap (about 2-3 cm in diameter), to cut out the center hole, creating the classic ring shape.

If you have a donut-shaped cutter, this step will be much quicker! However, even without one, using household items like cups and bottle caps allows you to easily create these charming ring donuts.

Heat a generous amount of vegetable oil in a pot or deep fryer to 150-160°C (300-320°F). Carefully place the shaped donut dough into the hot oil. Fry for about 2-3 minutes per side, until they turn a beautiful golden brown. Be mindful not to overcrowd the pot and maintain the oil temperature to ensure they cook through without burning.

Once fried to a golden perfection, remove the donuts from the oil and place them on paper towels or a wire rack to drain off any excess oil. Letting them cool slightly before coating is recommended for better sugar adhesion.
