A beloved national snack, dried squid, undergoes a special transformation! The salty and tough dried squid is reborn as a grilled squid butter dish packed with nutty butter, fragrant garlic, and sweet syrup, boasting a chewy yet tender texture. While delicious on its own, it becomes even more savory after cooking, making it a perfect side dish for rice or a simple, satisfying snack with drinks. Main Ingredients- 2 dried squids
Golden Ratio Seasoning- 40g unsalted butter
- 1 Tbsp minced garlic (generous amount)
- 2 Tbsp agave syrup (or honey, corn syrup)
- 1/2 Tbsp soy sauce (optional, adjust based on squid’s saltiness)
- Pinch of dried parsley flakes
- Pinch of grated Parmesan cheese or sesame seeds (for garnish)
- 40g unsalted butter

Cooking Instructions
Step 1
First, prepare 2 dried squids. Using scissors, cut the dried squid into bite-sized pieces for easier cooking. Cutting them into approximately 2-3 cm wide strips will help the seasoning penetrate evenly and cook nicely.

Step 2
Soak the cut squid in lukewarm water for at least 30 minutes. This step softens the saltiness and toughness of the squid, resulting in a chewier and more tender texture. (If you want to speed up the soaking process, you can use warm water!) After soaking, drain the squid thoroughly in a colander. Any remaining water can cause splattering during cooking and affect the texture.

Step 3
Melt 40g of unsalted butter in a heated frying pan over medium-low heat. Once the butter starts melting, add 1 Tbsp of minced garlic and sauté until fragrant. Next, add the dried parsley flakes, 2 Tbsp of agave syrup, and 1/2 Tbsp of soy sauce, mixing well to create the seasoning base. (Tip: If your dried squid is particularly salty, reduce or omit the soy sauce. Adjust the amount of minced garlic if you prefer less garlic flavor.) Once the sauce begins to simmer, add the soaked squid and mix well to coat the squid evenly with the seasoning.

Step 4
Now, stir the squid with chopsticks over medium-low heat, allowing the seasoning to infuse and cook until golden brown. Cooking slowly over medium-low heat prevents burning and ensures the inside remains moist. When the squid turns a appetizing brown color, just before turning off the heat, sprinkle with grated Parmesan cheese or sesame seeds and mix lightly to finish! This adds a delicious savory aroma.
