  • Cooking : Deep-fry
  • Difficulty : Anyone

Main Ingredients

  • 300g Chicken Thigh Meat
  • 2 Tbsp Glutinous Rice Flour
  • Generous amount of Cooking Oil
  • Pinch of Herb Salt

Cooking Instructions

Step 1

First, wash the chicken thigh meat thoroughly under cold water to remove any blood or impurities. Trim away any excess fat or gristle with scissors for a cleaner result. If you wish to further reduce any gamey smell, you can soak the chicken in milk for about 10-20 minutes.

Step 1

Step 2

I used ‘Chorokmaru Herb Salt’ for this recipe. If you don’t have herb salt, you can still make a delicious and simple fried chicken using just salt, pepper, and minced garlic. The herb salt adds a subtle aroma from various herbs, enhancing the flavor without overpowering the chicken’s natural taste. If you have time, marinating the chicken for about 30 minutes will deepen the flavors even more.

Step 2

Step 3

Coat the cleaned and trimmed chicken thigh meat evenly with glutinous rice flour. This coating is key to achieving that satisfying crispy and chewy texture when fried. For an easier coating process, you can place the chicken and glutinous rice flour in a resealable bag and shake it well.

Step 3

Step 4

Before placing the coated chicken into the pan, gently tap off any excess flour. This helps prevent the flour from sticking to the pan or clumping, and contributes to a crispier finish.

Step 4

Step 5

Heat a generous amount of cooking oil in a pan over medium-high heat. Once the oil is hot, add the chicken thigh pieces and cook until they turn golden brown on all sides. Then, reduce the heat to medium and continue cooking until the chicken is cooked through. If the pieces are not too large, they won’t take long to cook.

Step 5

Step 6

When frying, it’s best to let one side cook sufficiently before flipping, rather than flipping too often. You can also skip the glutinous rice flour and just use the marinade for a delicious result. Chicken thigh meat is naturally tender and juicy, so even without special seasoning, kids tend to love it. This recipe is great for lunchboxes, kids’ snacks, or as a late-night bite. Serve with fresh vegetables or a sweet and tangy fruit sauce for a more complete meal.

Step 6

Step 7

If you’d like a sweet and spicy chicken flavor, try using a pre-made sauce like ‘Natural Dream Yangnyeom Chicken Sauce’. It also works wonderfully as a dipping sauce for tteokbokki. This sauce is not too spicy and has a mild flavor, making it perfect for enjoying with children.

Step 7

Step 8

Kids craving chicken late at night will absolutely adore this! Using clean oil for cooking makes it a healthier option. While it might be higher in calories than steamed dishes, draining any excess oil on paper towels before serving can help.

Step 8

Step 9

Try making these glutinous rice flour fried chicken thighs, featuring a delightful chewy texture from the rice flour, savory chicken, and a subtle herbal aroma. I made these today as a hearty snack for my high schooler. Making a larger batch to use later as fillings for tortillas, hamburger patties, or as a salad topping is also highly recommended!
