Crispy Chewy Noodle Pancake

Inspired by a recipe from the Korean show ‘Pyeonstaurant’ by actress Lee Yu Ri, this is my own unique take on the chewy noodle pancake. It’s incredibly simple to make using just one pan and offers a delightful combination of chewy noodles, soft scrambled eggs, a sweet and spicy tteokbokki sauce, and rich mozzarella cheese. Perfect as a quick snack, appetizer, or even a light meal!

Main Ingredients

  • 2 servings Chewy Noodles (approx. 300g)
  • 2 large Eggs
  • 2 Scallions
  • 1 cup Shredded Mozzarella Cheese (approx. 100g)

Sweet & Spicy Tteokbokki Sauce

  • 1 Tbsp Gochujang (Korean chili paste)
  • 4 Tbsp Ketchup
  • 1/2 Tbsp Soy Sauce
  • 2 Tbsp Oligodang (corn syrup or similar)
  • 1/2 Tbsp Sugar

Cooking Instructions

Step 1

First, soak the chewy noodles in cold water for about 20-30 minutes until they soften. While the noodles are soaking, scramble one egg in a frying pan. This scrambled egg will be used as a garnish later, so it’s best to chop it into small pieces.

Now, let’s make the sweet and spicy tteokbokki sauce. In a bowl, combine 1 Tbsp gochujang, 4 Tbsp ketchup, 1/2 Tbsp soy sauce, 2 Tbsp oligodang, and 1/2 Tbsp sugar. Whisk everything together until well combined. Also, wash the scallions thoroughly and finely chop them.

Heat a generous amount of cooking oil in a frying pan. Spread the soaked chewy noodles evenly across the pan, making sure they don’t overlap. Press down firmly with a spatula to help the noodles cook evenly and become golden brown and slightly crispy on both sides. Once the underside is sufficiently browned, pour one beaten egg over the noodles, letting it seep into the gaps.

Once the egg starts to set slightly, carefully flip the noodles using a spatula, or tilt the pan and pour the second beaten egg over the other side of the noodles to cook. Using two eggs will result in a richer and more tender noodle pancake.

When both the noodles and egg are nicely golden brown, cut the pancake into bite-sized pieces (e.g., into four quarters). Then, spread the prepared tteokbokki sauce evenly over the cooked noodle pancake, ensuring it seeps in well.

Sprinkle the chopped scallions and a generous amount of shredded mozzarella cheese over the sauced noodles.

Now it’s time to melt the cheese beautifully. Cover the frying pan with a lid and cook over low heat just until the mozzarella cheese is fully melted and gooey. Be careful not to burn the cheese.

Finally, top the melted cheese with the finely chopped scrambled egg you prepared earlier for a beautiful garnish. This completes your delicious chewy noodle pancake! It’s best enjoyed immediately while warm.
