Crispy Potato Pancake with Chives: A Delicious Jeon Recipe

Potato Buchu Jeon Ingredients- 1 basket of potatoes (approx. 5-6 medium)
- 1/2 bunch of chives (approx. 50g)
- 1/2 onion
- 2 Korean green chili peppers (cheongyang peppers)
- 1 red chili pepper
- Pinch of salt
- Plenty of cooking oil
Cooking Instructions
Step 1
First, wash the chives thoroughly and chop them into roughly 2-3cm lengths. Deseed the Korean green chili peppers and the red chili pepper, then slice them thinly into julienne strips.
Step 2
Peel the potatoes and cut them into 4-6 large pieces. Place the cut potatoes, half an onion, and 1 cup of water into a blender. Blend until smooth. Adding a little water while blending the potatoes makes the process much easier and results in a smoother consistency.
Step 3
Pour the blended potato mixture into a fine-mesh sieve or cheesecloth set over a bowl. Gently squeeze out some of the excess liquid. Let the liquid that collected in the bowl sit undisturbed for about 10 minutes. After 10 minutes, carefully pour off the clear liquid from the top, leaving behind the white potato starch sediment at the bottom of the bowl. This starch is key to achieving a crispy texture!
Step 4
Add the lightly squeezed blended potatoes and the reserved potato starch sediment back into the bowl. Season with a pinch of salt to taste.
Step 5
Now, add the julienned chili peppers and chopped chives to the potato mixture.
Step 6
Stir everything together until well combined, preparing your batter for frying.
Step 7
Heat a generous amount of cooking oil in a pan over medium heat. Ladle portions of the batter onto the hot pan and spread them thinly. Fry until golden brown and crispy on both sides, especially around the edges. Your delicious Potato Buchu Jeon is now ready to be enjoyed!
