Surprisingly Crispy! Easy Homemade Chicken Breast Bites Recipe
Hello everyone! No weekend is complete without some delicious fried chicken. Yesterday, I visited a local butcher to get some fresh chicken and prepared it in advance. I was inspired by a recent chicken dish shared by my blogging friends, Rambl Couple, and was determined to make it this weekend. I ended up making it last night! This recipe uses tender chicken breast, making it a lighter yet incredibly satisfying treat.
Ingredients- 1 pack chicken breast (approx. 200-300g)
- 2 eggs
- 1 cup breadcrumbs
- Cooking oil (for frying)
- 1/2 tsp dried parsley flakes
- 1/2 cup tempura flour (or all-purpose flour)
Cooking Instructions
Step 1
Rinse the chicken breast thoroughly. Cut it into bite-sized pieces, about 2-3 cm thick, by slicing it lengthwise into three portions. It’s best to keep them slightly thick to prevent them from becoming dry when cooked.
Step 2
In a bowl, combine the cut chicken breast pieces with 2 eggs and mix well. Add 1/2 cup of tempura flour (or all-purpose flour) and toss to coat the chicken evenly, creating a batter. Cover the bowl and refrigerate for at least 30 minutes to let it marinate. This step helps ensure a crispier texture when fried. For added flavor, you can mix in some herbs, salt, and pepper into the batter.
Step 3
In a separate shallow dish, mix 1 cup of breadcrumbs with 1/2 tsp of dried parsley flakes. Take the marinated chicken pieces from the refrigerator and gently toss them in the breadcrumb mixture, ensuring each piece is well-coated. Heat a generous amount of cooking oil in a pan over medium heat. Once the oil is hot, carefully place the breaded chicken pieces into the pan and fry until golden brown and crispy on all sides. Be mindful of the oil temperature; if it’s too high, the outside might burn before the inside is cooked.
Step 4
Once cooked to a beautiful golden crisp, remove the chicken bites from the pan and place them on a paper towel-lined plate to drain excess oil. Experience the delightful crunch with every bite!
