Main Ingredients- 1 bunch chives (washed thoroughly)
- 2 large eggs
Seasoning & Others- 2 Tbsp olive oil
- 0.5 Tbsp oyster sauce
- 0.5 Tbsp sesame oil

Cooking Instructions
Step 1
First, wash the chives thoroughly under running water. Pat them completely dry with paper towels. Trim off the tough ends and cut the chives into approximately 5cm lengths, making them easy to eat.
Step 2
Crack the 2 eggs into a bowl. Whisk them with chopsticks or a fork until the egg mixture is slightly thickened – it shouldn’t run too freely when you lift the whisk. Whisking them just enough will help maintain a tender texture; over-whisking can lead to a tougher consistency.
Step 3
The key to a great chives and egg stir-fry is to cook it ‘quickly’! Using high heat ensures the chives remain crisp and don’t become soggy or tough, resulting in a much more enjoyable texture.
Step 4
Heat a wok or large skillet over high heat and add 2 tablespoons of olive oil. Once the pan is hot, pour in the whisked egg mixture. As the edges of the egg begin to set, gently stir with chopsticks to create soft, fluffy scrambled eggs. Cook them until they are about 80% done, leaving them slightly undercooked.

When the scrambled eggs are about 80% cooked, add the prepared 5cm chives to the pan. Continue to stir-fry quickly over high heat, ensuring the eggs and chives are evenly combined.

As soon as the chives begin to wilt slightly, add 0.5 tablespoon of oyster sauce. Stir-fry rapidly to coat everything evenly. Turn off the heat, then drizzle in 0.5 tablespoon of sesame oil and a pinch of black pepper. Give it a final quick toss to combine, and your delicious stir-fry is ready!
