This recipe is for crisp and clean white seasoned bean sprouts, made with leftover bean sprouts after cooking soup. They are an excellent side dish for rice, and you can adjust the seasoning to your taste. (Tablespoons are measured with a Korean rice spoon. If you prefer less salt, add more seasoning at the end to your preference.)

Ingredients for White Seasoned Bean Sprouts

  • 200g bean sprouts
  • 200ml water
  • 0.2 Tbsp salt (approx. 1/5 tsp)
  • A sprinkle of sesame seeds
  • A small amount of chopped green onion (optional)

Seasoning for White Seasoned Bean Sprouts

  • 0.7 Tbsp tuna extract (approx. 2/3 tsp)
  • 1 Tbsp sesame oil

Cooking Instructions

Step 1

First, prepare 200g of bean sprouts. Place them in a bowl, add enough water to cover the sprouts, and rinse them thoroughly 3-4 times. Then, drain them in a colander. Rinsing helps remove any unwanted odors and keeps them fresh.

In a pot, combine the rinsed 200g of bean sprouts, 0.2 Tbsp of salt, and 200ml of water. We’ll mix the salt after a moment, not right away.

Before turning on the stove, gently stir the bean sprouts with a spoon. This ensures the salt at the bottom is distributed evenly, helping the bean sprouts to be seasoned uniformly later.

Now, cover the pot with a lid and turn the heat to high. Cook the bean sprouts. Adding too much water can make the bean sprouts mushy. It’s important to steam them with a small amount of water and steam to maintain their crispiness!

While cooking on high heat, once you see steam gently rising from the lid, reduce the heat to medium. Continue to cook for about 6-7 minutes. After the time has passed, turn off the heat and let it rest, covered, for about 2 minutes. This process helps the bean sprouts cook through while retaining their crunchy texture.

After resting, open the lid and carefully scoop out only the bean sprouts with a spoon into a separate bowl. You can save the cooking water for other uses if desired.

To cool the warm bean sprouts, gently toss them with your hands in the bowl. Be careful not to overmix, as this can make them mushy. Just toss them lightly to let the heat dissipate.

Once the bean sprouts have cooled slightly, add 0.7 Tbsp of tuna extract and 1 Tbsp of sesame oil. Gently mix them together. Taste and add a tiny pinch of salt if needed to adjust to your preference. The tuna extract adds a lovely umami flavor.
