Ingredients- 4 medium potatoes
- 1 Tbsp mashed ripe avocado
- 2 eggs
- Pinch of salt
- 1/2 cup all-purpose flour (approx. 60g)
- 1/2 cup breadcrumbs (approx. 50g)
- Mozzarella cheese (cubed or cut into strips, as desired)
- Ketchup (for serving)

Prepare the avocado: Wash the avocado, remove the pit and skin. Mash it thoroughly with a fork until smooth. You’ll need 1 tablespoon of this mashed avocado.
