Main Ingredients

  • 1 cucumber (medium size)
  • 3 sticks of imitation crab meat (adjust to size)
  • 1/2 pack of enoki mushrooms (approx. 50g)

Dressing

  • 1/2 tsp salt (for seasoning)
  • 4 Tbsp vinegar (adjust for sourness)
  • 2 Tbsp sugar (adjust for sweetness)
  • 2 Tbsp sesame oil (for nutty flavor)
  • 1 Tbsp sesame seeds (ground or crushed)

Cooking Instructions

Step 1

First, wash the cucumber thoroughly. Using a peeler or knife, peel the outer skin in a spiral pattern – this helps reduce any bitterness and enhances the crispiness. Once peeled, julienne the cucumber into approximately 5cm lengths. For the imitation crab, cut each stick into about 3 pieces and then shred them lengthwise according to their natural grain. For the enoki mushrooms, trim off the tough bottom part, rinse them lightly under running water, and then squeeze out any excess moisture.

In a large bowl, combine the prepared julienned cucumber, shredded imitation crab, and the squeezed enoki mushrooms. Gently toss them together to mix evenly.

Now, let’s make the delicious dressing! In a separate bowl, combine 1/2 tsp of salt, 4 Tbsp of vinegar, 2 Tbsp of sugar, 2 Tbsp of sesame oil, and 1 Tbsp of ground sesame seeds. Stir well until the dressing is fully combined. Pour this dressing over the ingredients in the large bowl. Gently mix everything together with your hands, being careful not to overmix, which can make the cucumber mushy. Taste and adjust the seasoning by adding more vinegar or sugar if needed. Your crispy, sweet, and tangy cucumber and imitation crab salad is ready! It’s delicious served immediately, but for an even more refreshing taste, chill it in the refrigerator for a short while before serving.
