Main Ingredients- 1 cucumber
- 2/3 stalk green onion (scallion)
- 4 eggs
- 3 bowls of cooked rice (warm)
Seasoning- 3 Tbsp soy sauce (or regular soy sauce)
- 1 Tbsp chili oil
- 1 Tbsp plum extract (or syrup)
- 1 Tbsp sesame seeds

Cooking Instructions
Step 1
Wash the cucumber thoroughly. Using the back of a knife, gently scrape off the bumps on the skin. Trim about 2-3 cm from the ends, as they can be bitter. Cut the cucumber lengthwise into quarters, then chop into bite-sized, cube-like pieces.
Step 2
Slice the green onion similarly, into bite-sized pieces, matching the size of the cucumber. Cutting all ingredients to a similar size ensures even cooking and easier eating.
Step 3
Heat a generous amount of cooking oil in a pan over medium-high heat. Once the pan is hot, add the sliced cucumber and green onion. Stir-fry quickly over high heat to maintain the cucumber’s crispness. This is key to the dish’s texture!
Step 4
Once the vegetables are slightly stir-fried, reduce the heat to medium. Push the cooked vegetables to one side of the pan, add a little more cooking oil to the empty space, and crack the 4 eggs into it.
Step 5
As the eggs begin to cook, gently scramble them with chopsticks or a spatula. Once the scrambled eggs are cooked through, mix them evenly with the stir-fried vegetables.
Step 6
Now it’s time to add the rice and season. Add 3 bowls of warm cooked rice to the pan. Pour in 3 Tbsp of soy sauce (or regular soy sauce), 1 Tbsp of plum extract, and 1 Tbsp of chili oil. (Tip: I initially added about 2/3 Tbsp of chili oil and then added a little more later after tasting.)
Step 7
Combine the rice with the stir-fried vegetables and scrambled eggs. Stir-fry everything together, ensuring the seasoning is evenly distributed. Taste as you go and add a little more soy sauce if needed to reach your desired saltiness.
Step 8
Finally, sprinkle in 1 Tbsp of sesame seeds for a nutty aroma. For an extra touch of richness, you can also drizzle in a little sesame oil. Enjoy your delicious fried rice!
