Recently, I’ve become very interested in diet-friendly meals. Today, I’ve made a cucumber and tuna bibimbap that balances both flavor and low calories using fresh cucumbers. Despite its simple ingredients, the taste is incredibly delicious. Enjoy this light yet satisfying meal!

Main Ingredients

  • 1/2 cucumber (choose a fresh, crisp one)
  • 2 eggs
  • Cooking oil (for frying eggs)
  • Salt (a pinch for the eggs)
  • 4 Tbsp canned tuna (drained well to ensure a light flavor)
  • 8 sheets of seasoned seaweed (crumbled)
  • 2 bowls of cooked rice (warm)

Sauce for Cucumber Tuna Bibimbap

  • 3 Tbsp soy sauce (Guk-ganjang or Jin-ganjang)
  • 0.5 Tbsp sugar (adjust to taste)
  • 1 Tbsp perilla oil (adds a nutty aroma)
  • 0.5 Tbsp toasted sesame seeds (adjust quantity as desired)

Cooking Instructions

Step 1

Wash the cucumber thoroughly and then slice it thinly or cut it into bite-sized pieces. The key is to maintain its crisp texture.

Heat a frying pan over medium heat and add a little cooking oil. Fry 2 eggs to your preference, aiming for a sunny-side-up or soft-yolk consistency. Sprinkle a pinch of salt over each egg while cooking. Be careful not to break the yolk.

In a small bowl, combine 3 Tbsp soy sauce, 0.5 Tbsp sugar, 1 Tbsp perilla oil, and 0.5 Tbsp toasted sesame seeds. Mix well with a spoon until the sauce is thoroughly combined. You can adjust the sugar amount to your liking.
