Cucumber Kimbap Ingredients

  • 1 cucumber
  • 10 sheets of kimbap seaweed (gim)
  • 1 strip of kimbap ham
  • 3 eggs
  • Some simmered burdock root
  • 1 strip of pickled radish (danmuji)
  • 3 strips of imitation crab meat
  • 1/2 sheet of fish cake (eomuk)

Cooking Instructions

Step 1

First, prepare the cucumber. Slice it lengthwise into strips, similar to pickled radish (danmuji), for easy use in kimbap. It’s important to maintain its crispness!

Step 1

Step 2

The key is to carefully control the amount of salt used for pickling the cucumber! If you add too much, the cucumber will become too salty and won’t harmonize well with the other kimbap ingredients. Adjust the saltiness considering the overall seasoning of your kimbap. If you prefer a milder kimbap, use just a tiny pinch of salt to slightly wilt the cucumber. If you prefer it to have some flavor, add about 2/3 of a teaspoon.

Step 2

Step 3

Once you mix the cucumber with salt, it will lose some moisture and become tender and pliable. This prepared cucumber will add a refreshing crunch and coolness to your kimbap.

Step 3

Step 4

Now, prepare the other ingredients for your kimbap. Seasoning the rice as follows will make it even more delicious:
1. Season the rice with a pinch of salt (mas-salt).
2. Drizzle with sesame oil for a nutty aroma.
3. Add a tablespoon of vinegar to prevent the rice from clumping and give it a glossy sheen.
4. Sprinkle with sesame seeds for an extra nutty flavor.

Step 4

Step 5

For kimbap, it’s best to use seaweed (gim) that is thick and doesn’t tear easily. If you make kimbap often, consider buying a larger pack – it’s more economical. Kimbap-specific seaweed is often of good quality, tear-resistant, and makes for neat rolls. Sturdy seaweed is perfect for crispy cucumber kimbap! ^^

Step 5

Step 6

Now, layer the prepared ingredients onto the seaweed sheet, roll it up tightly, and you’ll have delicious kimbap with a satisfying crunch, thanks to the cucumber! You can enjoy this kimbap without any greasiness.
