- 1/2 Tbsp grapeseed oil
- 1 tsp minced garlic
- 1 Tbsp chopped green onion
Cucumber Brining Seasoning- 1 tsp salt
- 2 tsp sugar
- 3 tsp vinegar
Cooking Instructions
Step 1
Start by thoroughly washing your cucumber. Cut it in half lengthwise, then use a spoon to scoop out the seeds. Slice the cucumber diagonally into approximately 0.5cm thick pieces. In a bowl, combine the sliced cucumber with 1 tsp salt, 2 tsp sugar, and 3 tsp vinegar. Gently mix, then let it brine for 10 minutes. After brining, rinse the cucumber lightly under cold water and squeeze out any excess moisture. This step ensures a wonderfully crisp texture.
Step 2
Now, let’s make the stir-fried cucumber component. Heat a pan over medium-high heat and add the grapeseed oil. Add the chopped green onion and minced garlic, stirring until fragrant. Once the garlic begins to cook, add the squeezed cucumber pieces and stir-fry quickly. When the cucumber is slightly cooked, add the perilla seed powder and stir-fry for another moment. Turn off the heat, then quickly toss in the roasted whole perilla seeds. This creates your delicious, savory perilla cucumber stir-fry.
Step 3
Transfer the freshly made perilla cucumber stir-fry onto a wide plate and let it cool slightly. Allowing it to cool helps maintain the vibrant green color of the cucumber and enhances its crispiness.
Step 4
Prepare the Nongshim Dungji Bibim Naengmyeon according to package instructions. Since the perilla cucumber stir-fry is already seasoned, you can use the provided bibim naengmyeon sauce as is for a perfectly balanced flavor.
Step 5
Bring water to a boil for the noodles. Add the naengmyeon noodles and dried garnish packet. Once the water returns to a boil, reduce the heat to low and simmer for an additional 3 minutes. Immediately drain the noodles and rinse them thoroughly under cold running water. This step is crucial for achieving that signature chewy texture.
Step 6
Arrange the drained and cooled noodles in a serving bowl. Add the bibim naengmyeon sauce, a boiled egg, the prepared perilla cucumber stir-fry, and shredded dried pollack as toppings. Present it beautifully for an appealing meal.
Step 7
Doesn’t the combination of crisp cucumber, nutty perilla, and popping whole perilla seeds look absolutely delicious? It’s visually very appealing and promises great taste.
Step 8
It’s time to enjoy! Before digging in, use your chopsticks to thoroughly mix the noodles with all the toppings. This ensures that all the flavors meld together harmoniously.
Step 9
Experience the delightful crunch of the fresh cucumber, the savory depth from the dried pollack, and the fun texture of the popping whole perilla seeds – a truly satisfying combination. Enjoy this refreshing cucumber and perilla bibim naengmyeon, perfect for a warm day!
