Cucumber Rapé Ingredients- 1/2 medium cucumber
- 1 teaspoon olive oil
- 1 tablespoon whole grain mustard
- 1 teaspoon lemon juice
- 2/3 teaspoon honey (or to taste)
- Pinch of black pepper
For Salting Cucumbers- 2 pinches of salt
- 2 pinches of salt
Cooking Instructions
Step 1
First, wash the cucumber thoroughly and prepare a vegetable peeler.
Step 2
Using a mandoline or a sharp knife, thinly julienne the cucumber into fine strands.
Step 3
Add 2 pinches of salt to the julienned cucumber and toss well. Let it sit for about 10 minutes to draw out the moisture.
Step 4
After 10 minutes, firmly squeeze handfuls of the cucumber to remove as much liquid as possible. You’ll be surprised how much water comes out!
Step 5
To the drained cucumber, add 1 tablespoon of whole grain mustard and mix well.
Step 6
Next, add 1 teaspoon of olive oil and 1 teaspoon of lemon juice, and combine thoroughly.
Step 7
Since the cucumber has already been salted, no additional salt is needed. Add about 2/3 teaspoon of honey and taste. Adjust the sweetness to your preference – some people prefer it sweeter, others less so. If you’re using honey mustard, you can omit the honey. Finally, add a pinch of black pepper for extra flavor.
Step 8
Toast your slice of bread to your desired crispness. Spread 1 tablespoon of cream cheese evenly over one side of the toasted bread.
Step 9
Generously pile the prepared cucumber rapé on top of the cream cheese. Your delicious cucumber rapé open sandwich is now ready to enjoy!
