  • 2 cucumbers
  • 1/2 apple
  • 1/2 onion
  • 1/8 red cabbage

Seasoning

  • 2 Tbsp gochujang (Korean chili paste)
  • 3 Tbsp gochugaru (Korean chili flakes)
  • 2 Tbsp soy sauce
  • 2 Tbsp vinegar
  • 2 Tbsp sugar
  • 1 Tbsp minced garlic
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

First, wash the cucumbers thoroughly under running water. Use a peeler to thinly shave off the bumpy outer skin for a cleaner finish. Slice them into bite-sized pieces, about 0.5cm thick, either into half-moons or on an angle.

Slice the onion into 0.5cm thick pieces. Cut the red cabbage and apple into smaller cubes, about 0.5cm, which are slightly smaller than the cucumber pieces. It’s important to cut the vegetables into appropriate sizes so the seasoning can be absorbed well.

In a large bowl, combine the prepared cucumbers, onion, red cabbage, and apple. Add all the seasoning ingredients (2 Tbsp gochujang, 3 Tbsp gochugaru, 2 Tbsp soy sauce, 2 Tbsp vinegar, 2 Tbsp sugar, 1 Tbsp minced garlic, 1 Tbsp sesame oil). Finally, sprinkle with 1 Tbsp of toasted sesame seeds. Gently mix everything together with your hands or use a spatula to ensure all ingredients are evenly coated.
