Crispy Cucumber Salad (Oi Muchim)
A Special Cucumber Salad with Thick-Cut Strips!

Main Ingredients- 2 cucumbers
- 1 onion
- 1 Tbsp minced garlic
Seasoning- 1/2 tsp salt
- 2.5 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp gochujang (Korean chili paste)
- 2 Tbsp soy sauce
- 2 Tbsp rice vinegar
- 2 Tbsp allulose (or sugar)
- 1 tsp ginger syrup (or a pinch of minced ginger)
- 1/2 tsp salt
- 2.5 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp gochujang (Korean chili paste)
- 2 Tbsp soy sauce
- 2 Tbsp rice vinegar
- 2 Tbsp allulose (or sugar)
- 1 tsp ginger syrup (or a pinch of minced ginger)
Cooking Instructions
Step 1
First, wash the 2 cucumbers and trim off the ends. Slice them into thick strips, about 0.5 cm thick. Peel and thinly slice the 1 onion. Place the prepared cucumber strips, onion strips, and 1 Tbsp of minced garlic into a large bowl.
Step 2
Now, let’s make the delicious seasoning. In a small bowl, combine 1/2 tsp salt, 2.5 Tbsp gochugaru, 1 Tbsp gochujang, 2 Tbsp soy sauce, 2 Tbsp rice vinegar, 2 Tbsp allulose (you can substitute with sugar if you prefer more sweetness), and 1 tsp ginger syrup (or a tiny bit of minced fresh ginger if you don’t have syrup). Mix these ingredients well to create the seasoning paste. Pour the prepared seasoning over the cucumbers and onions in the large bowl. Gently toss everything together with your hands until the vegetables are evenly coated with the seasoning. Be careful not to mix too vigorously, as this can make the cucumbers lose their crispiness.
Step 3
Finally, sprinkle a generous amount of toasted sesame seeds on top for an extra nutty flavor. This salad is delicious served immediately, or you can chill it in the refrigerator for a while to enjoy it even more refreshing!
