Soaking dried radish in water can lead to the loss of its nutrients and delicious flavor. This method preserves the radish’s natural savory taste and delightful crunch, making it a perfect side dish for any meal. Main Ingredients

  • 60g dried radish strips
  • 2 Tbsp cooking wine (like Mirin)
  • 3 Tbsp oligosaccharide (or corn syrup)
  • 2 Tbsp soy sauce
  • 1 sheet dried kelp (about 5x5cm)
  • 1 Tbsp anchovy sauce (fish sauce)
  • 0.5 Tbsp sugar
  • 1 Tbsp minced garlic
  • 2 Tbsp red pepper flakes (gochugaru)

Cooking Instructions

First, since the dried radish strips are dehydrated, gently rinse them in clean cold water 2-3 times to remove any dust or impurities. Be careful not to rinse them for too long, as excess water can affect the final texture.

Place the rinsed dried radish strips in a bowl. Add 2 Tbsp of cooking wine, 3 Tbsp of oligosaccharide, 2 Tbsp of soy sauce, and the sheet of dried kelp. Gently mix everything together with your hands, ensuring the radish is evenly coated with the seasonings.

Let the seasoned radish mixture sit for about 20 minutes. During this time, the dried kelp will help draw out moisture from the radish, making it even crispier and infusing it with a rich umami flavor. After 20 minutes, remove and discard the kelp sheet. Leaving the kelp in for too long can sometimes impart a slightly bitter taste.

Now, add the remaining seasoning ingredients to the radish: 1 Tbsp of anchovy sauce, 0.5 Tbsp of sugar, 1 Tbsp of minced garlic, and 2 Tbsp of red pepper flakes. Mix well with your hands until everything is thoroughly combined. This will result in a delightfully crispy and flavorful dried radish salad! For an extra touch, you can sprinkle some toasted sesame seeds or a drizzle of sesame oil on top if you like.
