Hello everyone! Today, I’m excited to share a special recipe using a unique ingredient: ‘dried tofu’ (podubu). While it might be known as an ingredient in mala tang, dried tofu also comes in convenient forms like ‘ssam tofu,’ perfect for wraps. In this recipe, we’ll replace the traditional flour crust of a French quiche with dried tofu to create a delightful ‘tofu pie’! It’s reminiscent of pizza with its tangy tomato sauce, creamy eggs, and savory cheese, offering a delightful contrast of textures – crispy on the outside and wonderfully moist on the inside, almost like a cracker. It’s satisfyingly filling and boasts a mild, savory flavor that makes it a guilt-free, healthy treat!
Main Ingredients- Dried tofu (ssam tofu) 6 sheets
- Eggs 2 large
- Onion 1/2 medium
- Cherry tomatoes 3
- Tomato sauce 2 Tbsp
- Mozzarella cheese 45g
- Salt 1 pinch
- Dried herb powder a pinch (optional)
Cooking Instructions
Step 1
First, gently rinse the dried tofu sheets under cold water. This process helps to soften the dried tofu.

After rinsing, thoroughly pat the dried tofu dry with paper towels or a clean kitchen cloth. Excess moisture can make the pie soggy.

Finely mince the onion. The finer the dice, the smoother the texture in the pie.

Remove the stems from the cherry tomatoes, wash them, and slice them into 2-3 pieces each.

In a small bowl, combine the minced onion with 2 Tbsp of tomato sauce and mix well to create the onion mixture. The tanginess of the tomato sauce will add great flavor.

In a separate bowl, crack the 2 eggs and whisk them with a pinch of salt until well combined. The eggs will act as a binder for the ingredients.
