Main Ingredients- 1kg radish
Seasoning- 5 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp sugar
- 3 Tbsp anchovy sauce (or fish sauce)
- 1 Tbsp minced garlic
- Sesame seeds, to taste

Cooking Instructions
Step 1
First, prepare 1kg of radish. Wash the radish thoroughly, then slice it thinly into about 0.5mm strips. You can hand-cut it, or use a mandoline slicer for faster and more uniform results. If you have green onions, chop them finely to add freshness. If green onions aren’t available, scallions or the white part of leeks will also work nicely.

Place the julienned radish into a large bowl. Then, add the seasoning ingredients: 5 Tbsp gochugaru, 2 Tbsp sugar, and 1 Tbsp minced garlic. Gently toss to coat the radish and let it marinate for a few minutes to absorb the flavors.

Next, add 3 Tbsp of anchovy sauce. Finally, sprinkle generously with sesame seeds for a nutty aroma and flavor. Now, mix everything together vigorously with your hands until the seasonings are evenly distributed. To maintain the radish’s crispiness, avoid over-mixing.
