Egg Mayo Sauce

  • 1 Tbsp Mayonnaise
  • 1 Tbsp Lemon Juice
  • 1 Tbsp Oligosaccharide or Allulose (adjust to taste)
  • 1/2 Tbsp Whole Grain Mustard
  • Pinch of Black Pepper

Place the 3 eggs in a pot and cover them with enough water to fully submerge. Bring the water to a boil over high heat, then reduce to medium heat and boil for 10 minutes to make hard-boiled eggs. Rinse the boiled eggs under cold water and let them cool before peeling the shells.

Prepare the tortillas. Use a round cup to cut out tortilla chips. Arrange 3 of these cut tortilla pieces stacked on top of each other onto a skewer for a nice presentation. (The natural curve of the tortilla can help them overlap nicely.)

Preheat your air fryer to 180°C (350°F). Place the prepared tortilla skewers in the air fryer basket and bake for about 7-8 minutes, or until golden brown and crispy. It’s a good idea to check them halfway through to prevent burning.

Add 1 Tbsp of mayonnaise, 1 Tbsp of lemon juice, 1 Tbsp of oligosaccharide (or allulose), 1/2 Tbsp of whole grain mustard, and a pinch of black pepper. Seal the bag tightly. Now, mash the eggs inside the bag and mix everything thoroughly by kneading the bag to create the egg mayo salad. Ensure it’s mashed smoothly without lumps.
