Ingredients- 1 pack Enoki mushrooms
- 1/4 Red bell pepper
- Green onions (scallions)
- 2 strips Imitation crab sticks
- 2 Eggs
- 1 Tbsp Pancake mix (buchim garu)
- Pinch of black pepper
- Pinch of salt
Cooking Instructions
Step 1
Trim off the root end of the enoki mushrooms. Gently rinse them under running water and then finely chop them into bite-sized pieces, about 2-3 cm long. Finely dice the red bell pepper and green onions. Chop the imitation crab sticks into similar small pieces. Cutting the ingredients small helps the batter coat them evenly and makes them cook more uniformly.
Step 2
In a large bowl, crack in the 2 eggs. Add 1 tablespoon of pancake mix. The eggs will act as a binder for all the ingredients, and the pancake mix will contribute to a pleasant crispiness.
Step 3
Now it’s time to season the batter. Add a pinch of black pepper for extra flavor. Season with salt to your taste. Be careful not to add too much salt initially; it’s best to start with a small amount and adjust after tasting.

Add the prepared enoki mushrooms, diced red bell pepper, green onions, and chopped imitation crab sticks to the bowl with the eggs and pancake mix. Mix everything thoroughly with a chopstick or spatula until all ingredients are well-coated with the batter. If the batter seems too thin, add a little more pancake mix. If it’s too thick, add a splash more beaten egg to reach your desired consistency.
Step 5
Heat a generous amount of cooking oil in a frying pan over medium-low heat. Spoon small portions of the batter into the pan, shaping them into small, flat patties. Cook until the bottoms are golden brown, then carefully flip them over to cook the other side until equally golden and crispy. Continue this process until all the batter is used up.
