Crispy Fish Cutlets with Homemade Tartar Sauce for Kids

Transform your air fryer into a kitchen hero with this simple and delicious fish cutlet recipe! These crispy cutlets, paired with a zesty homemade tartar sauce, are sure to be a hit with children. This recipe yields approximately 2 servings. All measurements are based on a standard Korean tablespoon (15mL).
Tartar Sauce Ingredients- 100mL Mayonnaise
- 1 Tbsp Honey (or corn syrup, oligosaccharide)
- 1 Tbsp Vinegar
- 1/4 Cucumber (approx. 30g), seeds removed and finely diced
- 0.5 Tbsp Chopped Parsley (optional)
- A small amount of Carrot or Onion (optional, finely diced)
Cooking Instructions
Step 1
1. Make the Tartar Sauce Base: In a bowl, combine 100mL of mayonnaise with 1 Tbsp of vinegar. Whisk until smooth.

2. Add Sweetness: Stir in 1 Tbsp of honey. If honey is unavailable, corn syrup or oligosaccharide can be used as alternatives. Mix well.

3. Add Freshness: Add the finely diced cucumber (seeds removed). You can also add a small amount of finely diced carrot or onion according to your preference for extra flavor. Finally, sprinkle in 0.5 Tbsp of chopped parsley for aroma. Mix everything together and refrigerate.
Step 4
1. Prepare the Fish: Gently rinse the pollock fillets under running water. Pat them thoroughly dry with paper towels; this is crucial for the coating to adhere well and to prevent oil splattering during cooking. Season the fillets evenly with herb salt. If herb salt is not available, use pepper and sea salt instead.

2. Prepare the Breading Station: Set up three shallow dishes. In the first, place 100mL (approx. 200g) of all-purpose flour. In the second, whisk 2 eggs. In the third, put 200mL (approx. 200g) of breadcrumbs. (While the weight of flour and breadcrumbs might be similar, measuring by volume is often more convenient.)

3. Coat the Fish: Dredge each seasoned fish fillet first in the flour, shaking off any excess. Then, dip it into the beaten eggs, ensuring it’s fully coated. Finally, press the fillet firmly into the breadcrumbs, ensuring an even and thick coating. A good breadcrumb layer will make the cutlets extra crispy.
Step 7
4. Air Fry the Cutlets: Arrange the breaded fish cutlets in a single layer in the air fryer basket. Lightly spray them with olive oil. Air fry at 190°C (375°F) for 7 minutes. Flip the cutlets and continue to air fry at 190°C (375°F) for another 5 minutes, or until golden brown and crispy. (Cooking times may vary depending on your air fryer model.)
