  • 60g dried shredded pollack (about 2-3 pieces)
  • 150ml cooking oil (for frying)

First, prepare the dried shredded pollack. Lay the pollack flat and cut it into bite-sized pieces, such as 3cm x 5cm rectangles or long strips. Cutting them too small can cause them to break apart during frying, so maintaining a moderate size is important.

Pour 150ml of cooking oil into a frying pan or wok and heat over medium heat. If the oil temperature is too low, the pollack will become soggy, and if it’s too high, it will burn quickly. Wait until the oil reaches the appropriate temperature. Using a generous amount of oil is recommended for frying.

Once the oil is sufficiently hot (test by inserting a wooden chopstick; if small bubbles form around it, it’s ready), carefully add the cut pollack and fry quickly. Dried shredded pollack cooks very fast, so over-frying can make it tough or burnt. The key is to fry for a short time, about 30 seconds to 1 minute, until both sides are golden brown and crispy. Remove the fried pollack from the oil and place it on a plate lined with paper towels to drain excess oil. These fried pollack pieces are delicious on their own, or you can lightly toss them with a soy sauce or gochujang (Korean chili paste) seasoning for a different flavor profile. This simple yet tasty dish makes a perfect accompaniment to rice.
