Tangsuyuk Ingredients

  • 1 squid (cleaned)
  • 3 Tbsp potato starch or cornstarch
  • 1 egg white
  • Pinch of salt
  • Pinch of pepper
  • 1/2 tsp minced garlic
  • Vegetable oil for deep-frying

Cooking Instructions

Step 1

Let’s start by making the special sauce for your fried squid. In a pot, combine 1 cup of Omija or Baeknyeoncho berry concentrate with 50ml of water. Bring it to a gentle simmer. Once it starts bubbling, add your pre-chopped vegetables and cook them briefly until slightly tender. Next, gradually add the cornstarch slurry while stirring continuously until the sauce thickens to your desired consistency. Feel free to adjust the taste by adding a little sugar or vinegar if you like.

Now it’s time to prepare the squid for frying. Cut the cleaned squid into bite-sized pieces. In a bowl, add the squid pieces along with the egg white, salt, pepper, and minced garlic. Toss gently to coat the squid evenly. Then, dredge the squid in the starch, ensuring each piece is well-covered to create a crispy coating. Heat your frying oil to around 170-180°C (340-350°F). Carefully add the coated squid to the hot oil and fry until golden brown and crispy. For an extra crunchy texture, you can fry the squid once, remove it, let the oil temperature increase slightly, and then fry it again for a second time (double-frying).

Finally, let’s bring everything together! Pour the crispy fried squid (fresh from the second fry if you did that) into the prepared Omija sauce. Gently toss the squid to coat it evenly with the sauce. Your delicious fried squid tangsuyuk is now ready to be enjoyed! It’s best served immediately while it’s still warm and wonderfully crispy.
