Main Ingredients

  • 100g Spam (about 1/3 can)
  • 1/2 Onion
  • 2 Perilla leaves (깻잎)
  • 1 Clove garlic (thinly sliced for chips)
  • 0.5 Stalk Green onion (scallion)
  • 1 Bowl of warm cooked rice

Seasoning Sauce

  • 2 Tbsp Soy sauce
  • 1 Tbsp Sugar
  • 1.5 Tbsp Plum extract (매실액)
  • 100ml Water

Cooking Instructions

Step 1

1. Blanch the Spam: Open the Spam can and briefly dip the Spam block in hot water. This helps to remove impurities and slightly reduce its saltiness. Wash all vegetables thoroughly (onion, perilla leaves, green onions, garlic) and prepare them for cooking.

Step 1

Step 2

2. Slice the Garlic: Peel the garlic clove and thinly slice it into rounds, about 0.2 to 0.3 cm thick. This thickness is ideal for creating crispy garlic chips when fried.

Step 2

Step 3

3. Slice the Onion: Cut the onion into thick slices or julienne them to about 0.3 cm thickness. Avoid slicing too thinly, as they might break apart during cooking.

Step 3

Step 4

4. Chop the Green Onions: Finely chop the green onions. You can mix the white and green parts for a better color presentation when used as a garnish.

Step 4

Step 5

5. Slice the Spam: Cut the Spam into slices approximately 0.5 cm thick. This thickness ensures the Spam absorbs the sauce well and cooks quickly.

Step 5

Step 6

6. Julienne the Perilla Leaves: Wash the perilla leaves, pat them dry, then stack them and roll them up. Slice them into thin strips, about 0.5 cm wide. This will make them look attractive when layered on top.

Step 6

Step 7

7. Make the Sauce: In a small bowl, combine 2 tablespoons of soy sauce, 1.5 tablespoons of plum extract, 1 tablespoon of sugar, and 100ml of water. Stir until the sugar is completely dissolved. Getting the sauce ratio right is key to a delicious Spam-dong.

Step 7

Step 8

8. Fry the Garlic Chips: Heat a generous amount of cooking oil in a frying pan over low heat. Add the sliced garlic and fry until golden brown and crispy. Stir frequently to prevent burning. Once crisp, remove the garlic chips with a slotted spoon and drain on paper towels.

Step 8

Step 9

9. Sear the Spam: Carefully drain most of the oil from the pan used for the garlic. Place the sliced Spam in the pan and sear over medium heat until both sides are golden brown. Searing enhances the Spam’s flavor.

Step 9

Step 10

10. Braise the Spam: Once the Spam is seared, pour the prepared sauce into the pan. Reduce the heat to medium-low and let the sauce simmer and thicken, coating the Spam. Stir the Spam occasionally to ensure even glazing and prevent the sauce from burning.

Step 10

Step 11

11. Sauté the Onions: Add the sliced onions to the same pan with the remaining sauce. Sauté until the onions become translucent and tender. Be careful not to overcook them, as they can become mushy.

Step 11

Step 12

12. Assemble the Base: Place 1 bowl of warm cooked rice in your serving bowl. Evenly spread the sautéed onions over the rice. The tender onions will complement the rice perfectly.

Step 12

Step 13

13. Garnish and Serve: Arrange the glazed Spam attractively on top of the onions. Add a generous layer of the julienned perilla leaves for a fresh aroma. Finally, sprinkle the crispy garlic chips and chopped green onions over everything. Your delicious and visually appealing ‘Garlic Chip Spam Bowl’ is ready to be enjoyed!
