How to Make Delicious Soybean Powder Steamed Garlic Scapes
Made a steamed garlic scape dish coated with soybean powder, using fresh garlic scapes that are abundant this season. It’s a healthy and flavorful side dish.
Main Ingredients
- 200g fresh garlic scapes
- 5 Tbsp raw soybean powder
Seasoning
- 1/4 tsp salt (for taste)
- 1/2 Tbsp fish sauce
- 1/2 Tbsp soy sauce
- 1/2 Tbsp plum syrup
- 1 Tbsp sesame seeds (ground)
- 1 Tbsp sesame oil
- 1 Tbsp whole sesame seeds (for garnish)
- 1/4 tsp salt (for taste)
- 1/2 Tbsp fish sauce
- 1/2 Tbsp soy sauce
- 1/2 Tbsp plum syrup
- 1 Tbsp sesame seeds (ground)
- 1 Tbsp sesame oil
- 1 Tbsp whole sesame seeds (for garnish)
Cooking Instructions
Step 1
Trim the tough ends of the garlic scapes, then cut them into bite-sized pieces, about 4-5 cm long. Ensure they are clean.
Step 2
Soak the cut garlic scapes in a bowl of water with a splash of vinegar for about 5 minutes. This helps to maintain their crispness and remove any impurities. After soaking, rinse them thoroughly under cold running water and drain well.
Step 3
While the garlic scapes are still slightly moist, add 5 tablespoons of raw soybean powder and 1/4 teaspoon of salt. The moisture will help the soybean powder adhere evenly.
Step 4
Gently toss the garlic scapes with your hands or a spatula until the soybean powder is evenly coated on all pieces. Make sure there are no clumps of soybean powder.

Prepare your steamer. Add a small amount of water to the pot (just enough to create steam, about 2-3 cm high). Too much water can cause splattering, making the dish mushy. Place the steamer basket on top. Let the water come to a boil and generate plenty of steam.

Once the water is boiling and steaming well, carefully place the soybean powder-coated garlic scapes into the steamer basket. Spread them out in a single layer for even cooking.

Cover and steam for only 2-3 minutes. Garlic scapes can be eaten raw, so the goal is just to lightly cook the soybean powder and slightly tenderize the scapes without making them soggy. Overcooking will result in a loss of their delightful crunch.

In a small bowl, combine 1/2 tablespoon of fish sauce, 1/2 tablespoon of soy sauce, 1/2 tablespoon of plum syrup, 1 tablespoon of ground sesame seeds, and 1 tablespoon of sesame oil. Whisk everything together to create a flavorful dressing. The ground sesame seeds might give the dressing a slightly darker hue.
Step 9
Transfer the steamed garlic scapes to the bowl with the prepared dressing. Gently toss them to coat evenly, being careful not to mash or press too hard, which could cause the soybean powder coating to fall off. Use chopsticks or a spatula for a delicate mixing motion.
