Main Ingredients- 200g Garlic Scapes
- 30g Dried Shrimp
- 2 Red Chili Peppers
Seasoning Ingredients- 1 Tbsp Cooking Oil
- 2 Tbsp Soy Sauce
- 1 Tbsp Mirin (Rice Wine)
- 5 Tbsp Water
- 2 Tbsp Oligodang (Corn Syrup) (or sugar)
- 1 Tbsp Toasted Sesame Seeds
- 1 Tbsp Sesame Oil
- 1 Tbsp Cooking Oil
- 2 Tbsp Soy Sauce
- 1 Tbsp Mirin (Rice Wine)
- 5 Tbsp Water
- 2 Tbsp Oligodang (Corn Syrup) (or sugar)
- 1 Tbsp Toasted Sesame Seeds
- 1 Tbsp Sesame Oil
Cooking Instructions
Step 1
First, wash the garlic scapes thoroughly under running water and cut them into bite-sized pieces, about 4-5 cm long. Slice the red chili peppers diagonally or chop them finely. The chili peppers add color and a mild spicy flavor.
Step 2
Now, let’s prepare the dried shrimp. Heat a dry pan over medium-low heat. Add the dried shrimp without any oil and stir-fry for 2-3 minutes. This process removes any fishy smell and enhances their savory, crispy texture. Transfer the stir-fried shrimp to a separate bowl.
Step 3
Add 1 tablespoon of cooking oil to the stir-fry pan and heat over medium heat. Add the sliced garlic scapes and stir-fry for 1-2 minutes until they become slightly translucent and tender. Be careful not to overcook them; maintaining the garlic scapes’ signature crispiness is key.
Step 4
Let’s make the delicious stir-fry sauce. In a small bowl, combine 2 tablespoons of soy sauce, 1 tablespoon of mirin, 5 tablespoons of water, and 2 tablespoons of oligodang. Mix well. You can use sugar instead of oligodang, but oligodang adds a nice sheen. (We’ll add sesame seeds and sesame oil at the end.)
Step 5
Once the sauce starts to boil, add the stir-fried garlic scapes and dried shrimp back to the pan. It’s best to keep the heat on high at this stage.
Step 6
Now, stir-fry everything quickly over high heat for about 1 minute, ensuring all ingredients are well coated with the sauce. This rapid stir-frying helps the garlic scapes retain their crispiness while absorbing the flavorful sauce. Just before turning off the heat, drizzle in 1 tablespoon of sesame seeds and 1 tablespoon of sesame oil, stir quickly, and it’s done, adding a nutty aroma.
Step 7
Transfer the delicious stir-fried garlic scapes and dried shrimp to a serving plate. Sprinkle some whole sesame seeds on top for an even more appealing presentation.
Step 8
The finished Garlic Scapes and Dried Shrimp Stir-fry offers a fantastic balance between the crispy, savory dried shrimp and the crunchy, slightly pungent garlic scapes. Savor the rich flavors that unfold with every bite.
Step 9
This delectable stir-fry is perfectly savory and umami-rich, making it an excellent accompaniment to beer or a fantastic side dish to enjoy with rice. Add a special touch to your meal by making this dish!
