Cooking Instructions
Step 1
To reduce the pungent heat of the garlic and bring out its mellow flavor, briefly blanch the thinly sliced garlic in boiling water with a pinch of salt. Do this very quickly, like the speed of light! Blanching for too long will make the garlic mushy and prevent it from becoming crispy when fried, so be mindful of the time.
Step 2
Drain the blanched garlic thoroughly in a colander. Gently pat it dry with paper towels to remove any excess moisture. This step is crucial to prevent oil splattering when frying and to achieve a crispier texture.
Step 3
The drained garlic now needs to be dried. You can use a food dehydrator or the drying function of your oven for convenience. If the weather is nice, drying it in the sun is also a great option. On a sunny day like today, drying it in the sun for about half a day yields wonderfully dry garlic slices.
Step 4
Fry the well-dried garlic slices in plenty of cooking oil over medium-low heat until crispy. If the oil is too hot, the garlic will burn quickly. It’s important to fry slowly over medium-low heat to ensure the inside is toasted and nutty. If you prefer baking, you can also bake them in a preheated oven at 150°C (300°F) for about 15-20 minutes until golden brown. Feel free to use the method that works best for you.
Step 5
To avoid the hassle of picking out each fried garlic slice and prevent the remaining ones from burning, place a fine-mesh sieve over a heatproof bowl to catch the oil. Immediately pour the fried garlic into the sieve. This way, the oil drains out, and you can neatly collect all the crispy garlic snacks at once.
Step 6
Your savory and crispy garlic snacks are complete after draining the excess oil! For an extra kick, you can sprinkle a pinch of salt to taste. Once cooled slightly, store them in an airtight container to maintain their crispiness for longer.
