Cooking Instructions
Step 1
If your Tteokguk Tteok are frozen, soak them in water for about 10 minutes until they soften. Pat the beef dry with paper towels, cut into grill-friendly pieces, and lightly season with salt and pepper.
Step 2
Drain the soaked Tteokguk Tteok thoroughly. Toss the drained rice cakes with 1 tsp of sesame oil, then microwave for 1 minute. This makes them chewier and less likely to break apart. Wash the baby greens, lettuce, and sliced bell pepper under cold running water. Ensure they are well-drained, either by shaking them dry or using a salad spinner.
Step 3
Time to make the spicy-sweet mustard sauce! In a small bowl, combine 2 tsp mustard, 1 tbsp soy sauce, 1 tbsp mirin, and 1 tbsp oligo syrup (or honey). Whisk until smooth and well combined. Heat a generous amount of grapeseed oil in a frying pan over medium-low heat. Add the prepared Tteokguk Tteok and pan-fry until golden brown and slightly crispy on both sides. Once heated through and slightly crisp, set them aside.
Step 4
Set the cooked rice cakes aside on a plate. Add a little more grapeseed oil to the same pan. Coat the seasoned beef pieces evenly with glutinous rice flour, tapping off any excess. Carefully place the coated beef into the preheated pan over medium-low heat. Cooking over medium-low heat, rather than high, ensures the glutinous rice coating doesn’t burn and the beef cooks through properly. Grill the beef, flipping occasionally, until both sides are a beautiful golden brown. To serve, artfully arrange the fresh greens, grilled beef, and pan-fried rice cakes on a large platter. You can either dip the beef and rice cakes into the mustard sauce or drizzle the sauce over the entire dish for a delightful finish.
