Even on hot days, the kids want meat, especially grilled pork belly. But grilling it for them can be quite a chore for me! So, I whipped up this quick stir-fried dish using thinly sliced pork belly, my current favorite ingredient. Because it’s so thin, it cooks up incredibly fast, which is a lifesaver! While it might lack some of the chewiness of thicker cuts, it’s still pork belly, so it’s delicious. On scorching days like these, dishes that minimize cooking time are the best! When stir-fried until nicely browned and served wrapped in lettuce, the slightly thinner texture is easily overlooked. This crispy Gochujang pork belly bulgogi is perfect for a weekend camping trip! Main Ingredients
  • 600g thinly sliced pork belly (daepae samgyeopsal)
  • 1/2 medium onion
  • 5 cloves garlic

Seasoning
  • 1 Tbsp Gochujang (Korean chili paste)
  • 2 Tbsp Soy Sauce (adjust to taste)
  • 3 Tbsp Oligodang (Korean corn syrup) or other liquid sweetener (adjust to taste)
  • 4 Tbsp Mirin (rice wine)
  • Salt (to taste)
  • Chopped green onion (for garnish)
  • Toasted sesame seeds (for garnish)

Cooking Instructions

Step 1

First, thinly slice the 5 cloves of garlic into slivers. Slicing them this way will infuse their flavor into the pork as it cooks.

Step 2

Slice the half onion into relatively thick pieces. Cutting them this way will help maintain a pleasant texture after stir-frying, making the dish more enjoyable.

Step 3

Heat a large pan or wok over medium-high heat. Add the thinly sliced pork belly and let it preheat for a moment. Once the pan is hot, add the sliced garlic and onion. Stir-fry them together until the garlic is fragrant and the onion becomes translucent.

Step 4

Once the pork is partially cooked, add the prepared seasoning ingredients (gochujang, soy sauce, oligodang, mirin, and salt) in order. Stir-fry everything together until the sauce evenly coats the meat. It’s best to cook over high heat for a short time to achieve a crispy texture.

Step 5

Finally, turn off the heat. Sprinkle with chopped green onion and toasted sesame seeds. Give it a final mix, then transfer the delicious crispy Gochujang pork belly bulgogi to a serving plate. Enjoy this easy and tasty dish, perfect for camping or a quick meal at home!
