Have you got some potatoes in your fridge starting to look a little wrinkly? It’s completely natural to feel a bit guilty or hesitant about eating them, thinking they might not be as good. Even though I still need help with household chores, one day, when my helper aunt visited, I decided to tackle those slightly wrinkled potatoes. I peeled them all and carefully selected the good, firm ones. And then, with a cheeky grin, I bought a whole 10-pound bag of fresh, perfect potatoes! This recipe is a wonderful way to use up both those forgotten potatoes and your fresh bounty. Get ready for golden-brown, crispy-on-the-outside, tender-on-the-inside potato pancakes that will elevate your mealtime.
Ingredients- 1 medium potato
- A little carrot (optional)
- 1 Tbsp potato starch
- 2 pinches of salt
- A pinch of black pepper
- A little dried parsley (optional)
Cooking Instructions
Step 1
First, peel the potato and slice it into thin matchsticks. If you have a carrot on hand, julienne it thinly as well, similar in thickness to the potato matchsticks. Adding carrot not only enhances the visual appeal but also adds a delightful texture.
Step 2
In a bowl, combine the julienned potato and carrot. Add 1 tablespoon of potato starch, 2 pinches of salt, a pinch of black pepper, and a sprinkle of dried parsley if desired. Gently mix everything together until well combined. The potato starch will help bind the mixture and ensure a crispier finish.
Step 3
Heat a frying pan over medium heat and add a generous amount of cooking oil. Spoon the potato mixture into the hot pan and spread it out thinly into a pancake shape. It’s crucial to make them thin, as thicker pancakes might not cook through evenly and can become soggy.
Step 4
Cook for about 3-4 minutes per side, until golden brown and crispy. You’ll know they’re ready to flip when they no longer stick to the pan. Gently shake the pan to check. Flip them over and continue to cook until both sides are a beautiful golden color. Once cooked to perfection, you’ll have wonderfully crispy yet tender potato pancakes ready to enjoy!
