Homemade Curry Chicken with Crispy French Fries
Hello everyone, it’s Choimom! I found fresh chicken on sale at the supermarket and ordered it online without a second thought. I wasn’t sure what I’d make, but I bought it anyway! Turns out, everyone was going to be late home today. So, when my youngest finished her academy class after 10 PM, and feeling hungry, I quickly whipped up some curry chicken and french fries. My daughters and son-in-law arrived later and were surprised, asking ‘Wow, what smells so delicious?’ We all enjoyed it together!
Chicken Ingredients- 1kg fresh chicken
- 1/2 Tbsp salt (for seasoning)
- 900ml cooking oil (for frying)
Chicken Curry Batter- 10 Tbsp fried chicken powder
- 1 Tbsp cornstarch (for extra crispiness!)
- 1 Tbsp curry powder (for flavor!)
- 1 egg
- Pinch of black pepper
French Fries Ingredients- 2 potatoes (medium to large)
- Cornstarch (for coating)
- Pinch of salt
- Pinch of pepper
- Ketchup (for dipping)
- 10 Tbsp fried chicken powder
- 1 Tbsp cornstarch (for extra crispiness!)

French Fries Ingredients- 2 potatoes (medium to large)

Cooking Instructions
Step 1
First, let’s prepare the chicken. Trim away any excess fat or any unwanted bits from the chicken. Cleanly prepared chicken is the foundation for a great dish.

Wash the prepared chicken thoroughly under running water. After washing, place it in a colander and drain as much water as possible. Leftover moisture can cause oil to splatter during frying or make the coating soggy.

Once the chicken is mostly dry, sprinkle it evenly with 1/2 tablespoon of salt (either regular or fine salt) for seasoning. Gently shake the colander to ensure the salt coats the chicken evenly. Let it marinate for at least 10 minutes for better flavor.

While the chicken is marinating, let’s prepare the batter. When the chicken seems sufficiently dry, first coat it evenly with 1 tablespoon of cornstarch. Cornstarch helps the batter adhere well to the chicken.

Now for the secret to crispiness! Add 10 tablespoons of fried chicken powder. Using only fried chicken powder can make the coating too hard, so adding cornstarch together will result in a much crispier and lighter texture.

Add 1 tablespoon of curry powder for that aromatic curry flavor. Curry powder not only adds a unique and appealing taste to the chicken but also gives the coating a beautiful color.

After adding the fried chicken powder and curry powder, gently mix the chicken to ensure the batter coats it evenly. It might look clumpy at first, but that’s okay. Mix thoroughly until well combined.

Add 1 egg to the mixture for a smoother and more tender batter. The egg helps make the coating softer and contributes to a richer flavor when fried.

Finally, add a pinch of black pepper. Pepper helps eliminate any gamey smell from the chicken and enhances its overall flavor. Mix everything together again until the chicken is evenly coated with the batter. Adjust the consistency of the batter as needed – it shouldn’t be too thin or too thick.

Now, let’s prepare the frying oil. A 900ml bottle of cooking oil is usually enough to fry one whole chicken. You don’t need a dedicated deep fryer; a deep frying pan will work perfectly for delicious chicken.

Pour 900ml of cooking oil into the frying pan and heat over medium heat. The ideal frying temperature is around 170-180°C (340-355°F). Turn on the heat and wait for the oil to get sufficiently hot.

While the oil is heating up, prepare the french fries. Wash two medium-to-large potatoes clean.

Cut the potatoes into your desired fry shape. Cutting them into thicker fries that are usually served with chicken is a good choice. Sprinkle cornstarch over the cut potatoes.

Coat the potato pieces evenly with the cornstarch. This step ensures the coating sticks well. Oh! Let’s check the oil temperature. If you drop a few grains of coarse salt into the oil and it sizzles with a ‘tap-tap’ sound, the oil is ready for frying.

Now, carefully place the battered chicken pieces into the hot oil. You’ll hear that satisfying ‘sizzle’ as the chicken begins to cook. Be careful not to have the oil too hot initially, as it might burn the outside before the inside is cooked. Start frying over medium heat.

Fry the chicken for about 7-8 minutes until golden brown, then remove it from the oil and let it drain. This is the first part of the double-frying process to maximize crispiness. Set the fried chicken aside, and now it’s time to fry the potatoes.

Add the cornstarch-coated potato fries to the hot oil. Fry the potatoes until they are golden brown. Avoid frying over high heat, as they can burn quickly; medium-low heat is best.

Remove the first batch of fried potatoes and drain them. Sprinkle a little salt and pepper over the drained fries to season them. Seasoning them now ensures they are perfectly flavored when eaten.

Double-frying is key for super crispy chicken and fries! Place the chicken and potatoes back into the hot oil for a second fry, about 3-4 minutes more. The second fry is done over higher heat for a shorter time to make the exterior extra crispy. Repeating this double-frying process results in delicious curry chicken and perfectly crispy french fries!
