Chicken Ingredients- 4 chicken drumsticks
- 500mL vegetable oil (for frying)
Chicken Marinade- 1 cup tempura flour
- 1/2 cup water
- 1/2 Tbsp curry powder (for flavor!)
- 1 egg
Crispy Coating Mix- 1 cup tempura flour
- 1/2 cup panko breadcrumbs (for extra crispiness!)
- 1 cup tempura flour
- 1/2 cup water
- 1/2 Tbsp curry powder (for flavor!)
- 1 egg
Crispy Coating Mix- 1 cup tempura flour
- 1/2 cup panko breadcrumbs (for extra crispiness!)
Cooking Instructions
Step 1
1. Marinate the Chicken: First, rinse the chicken drumsticks. In a bowl, combine 1 cup of tempura flour, 1/2 cup of water, 1/2 Tbsp of curry powder, and 1 egg. Whisk well to create a batter. Add the chicken drumsticks to the batter and coat them evenly. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld. (Curry powder adds a subtle aroma and helps tenderize the meat).
Step 2
2. Apply the Coating: Remove the marinated chicken from the refrigerator and gently pat off any excess moisture. In a separate bowl, mix 1 cup of tempura flour with 1/2 cup of panko breadcrumbs to create the dry coating. Using panko breadcrumbs will give your chicken an extra layer of crispiness. Lightly coat each chicken drumstick with the dry mixture, ensuring an even layer without pressing too hard.
Step 3
3. Preheat the Frying Oil: Pour 500mL of vegetable oil into a deep pot or wok. Heat the oil over high heat for about 5 minutes. Ensuring the oil is hot enough is crucial for achieving a crispy crust.
Step 4
4. First Fry: Carefully place the coated chicken drumsticks into the hot oil. Let them fry undisturbed for the first 2 minutes to allow the coating to set. Avoid stirring immediately after adding the chicken, as this can cause the coating to detach. After 2 minutes, adjust the heat to medium-high and gently stir the chicken to prevent it from sticking together. Continue to fry for approximately 8 minutes for the first fry.
Step 5
5. Reheat the Oil: Remove the chicken from the first fry and place it on a wire rack or paper towels to drain excess oil. The oil temperature may have dropped, so reheat the oil for another 2 minutes by turning the heat back up.
Step 6
6. Second Fry (for Extra Crispiness!): Once the oil temperature has returned to the desired level, carefully add the chicken drumsticks back into the hot oil. Fry for an additional 6-7 minutes. This double-frying method ensures an incredibly crispy exterior and a perfectly juicy interior.
Step 7
Using panko breadcrumbs is the secret to achieving an even crispier and more delicious chicken! It’s simple to make at home and makes for a highly recommended snack.
Step 8
The rich aroma and satisfying crunch of freshly fried chicken are truly irresistible. Why not make a generous batch at home for your family to enjoy? Enjoy your meal! 🙂
