  • 300g cabbage
  • 1/2 onion
  • 1/2 stalk green onion (white part)
  • 50g chives
  • 1/2 Tbsp minced garlic
  • 1 Tbsp minced ginger
  • 1 tsp salt

Pork Seasoning

  • 1 tsp salt
  • 1 Tbsp sake (or cooking wine)
  • 1 Tbsp soy sauce
  • 1/2 Tbsp oyster sauce
  • A pinch of black pepper
  • 1 Tbsp sesame oil

Cooking Instructions

Step 1

Prepare all the ingredients for the dumpling filling. Using fresh ingredients is key to a delicious gyoza.

Step 1

Step 2

Finely chop all the filling ingredients. For the cabbage, it’s best to chop it finely, salt it lightly, and then squeeze out as much moisture as possible. This will ensure the filling isn’t watery and maintains a pleasant texture.

Step 2

Step 3

In a bowl, combine the ground pork with all the seasoning ingredients. Mix well until the mixture becomes sticky and cohesive. Kneading in one direction with chopsticks helps the filling become juicy and bind together nicely.

Step 3

Step 4

In a separate bowl, combine the remaining filling ingredients (chopped cabbage, onion, green onion, chives, minced garlic, and minced ginger). Mix them together thoroughly.

Step 4

Step 5

Now, combine the seasoned pork with the chopped vegetable mixture. Mix gently until just combined. Overmixing can release excess moisture from the ingredients, so be careful not to mix too much.

Step 5

Step 6

Using store-bought dumpling wrappers is the easiest way to assemble the gyoza. Lightly moisten the edges of the wrappers with water and fold them into your desired shape. To cook, heat some oil in a frying pan and pan-fry the gyoza until golden brown and crispy on both sides. Your delicious homemade gyoza, with a crisp exterior and juicy interior, will be ready to enjoy! Perfect with a cold beer.
