Delicious and Healthy Snack for Diabetics: Guilt-Free Tofu Crackers!

We’ll be using tofu, a fantastic ingredient known for its health benefits, especially for managing blood sugar, to create incredibly tasty crackers! Unlike many store-bought snacks packed with artificial flavors and excessive sugar, these tofu crackers are naturally wholesome and satisfying. Let’s get baking this healthy delight! ♥
Ingredients- Tofu 100g (water removed)
- All-purpose flour 150g (or cake flour, whole wheat flour, etc.)
- Salt 4g (approx. 2/3 tsp)
- Sugar 30g (approx. 2 tbsp, adjustable to taste)
- 1 Egg (room temperature)
- Black sesame seeds 15g (approx. 1.5 tbsp)
Cooking Instructions
Step 1
First, sift 150g of all-purpose flour into a mixing bowl. Sifting helps to remove lumps and ensures a smoother dough consistency.
Step 2
Add 4g of salt, 30g of sugar, and 15g of black sesame seeds to the flour. Mix these dry ingredients together thoroughly with a spatula or your hands until well combined.

Next, take 100g of tofu and press it firmly between layers of paper towels to remove as much moisture as possible. Removing excess water is crucial to prevent the dough from becoming too wet.

Mash the drained tofu using a fork until it’s smooth and free of large lumps. Aim for a texture similar to mashed potatoes, ensuring there are no large chunks remaining.

Add 1 room-temperature egg to the mashed tofu and mix it in until it forms a smooth, cohesive paste, almost like a thick cream.

Now, combine the mashed tofu-egg mixture with the dry ingredients you prepared earlier. Mix everything together until a dough starts to form. Knead it gently until it comes together into a single ball.

Wrap the dough tightly in plastic wrap and refrigerate for 30 minutes. This resting period allows the gluten to relax, making the dough easier to roll and resulting in crispier crackers.

Once chilled, place the dough on a lightly floured surface. Use a rolling pin to roll it out thinly to about 2-3mm thickness. Try to achieve an even thickness for consistent baking.
