Dough Ingredients- 250g Bread flour (high-gluten flour)
- 150g Water
- 15g Sugar
- 7g Salt
- 4g Dry instant yeast
- 12g Vegetable oil
Sweet Filling Ingredients- 60g Dark brown sugar
- 20g Light brown sugar
- 20g Cornstarch
- Pinch of cinnamon powder (to taste)

Cooking Instructions
Step 1
In a mixing bowl, combine all the dough ingredients: bread flour, water, sugar, salt, dry instant yeast, and vegetable oil. If using a stand mixer, knead for about 15 minutes until a smooth and elastic dough forms. If kneading by hand, continue to knead until the dough is smooth and well-developed. Shape the dough into a ball, place it in a greased bowl, cover with plastic wrap, and let it undergo its first proof for about 1 hour in a warm place. The proofing time may vary depending on the ambient temperature, but the dough should be roughly double its original size when proofed.
Step 2
Once the first proof is complete, gently punch down the dough to release the air. Divide the dough into your desired portions (e.g., 7 portions of 45g each and 5 portions of 25g each). Shape each portion into a ball, cover with a damp cloth, and let it rest for about 15 minutes for an intermediate proof. While the dough is resting, prepare the filling by mixing the dark brown sugar, light brown sugar, cornstarch, and cinnamon powder in a separate bowl until well combined. The cornstarch helps prevent the sugar from melting and leaking out during baking.
Step 3
Transfer the rested dough portions to a lightly floured work surface. Use a rolling pin to flatten each dough ball into a thin, even circle. Spoon a generous amount of the prepared filling onto the center of each flattened dough. Carefully gather the edges of the dough together to enclose the filling completely, ensuring there are no gaps where the filling can escape. Once sealed, gently roll out the filled dough again with a rolling pin to your desired thickness. Place the shaped dough onto a baking sheet lined with parchment paper.
