The goal of this recipe is to achieve ‘Geot-ba-sok-chok’ (겉바속촉), meaning a crispy exterior and a juicy, tender interior. Using your air fryer, you can easily replicate the deliciousness of a professional roast chicken at home.

First, thoroughly clean out the cavity of the chicken. Trim away any excess fat, especially around the tail area. Rinse the chicken inside and out under cold running water. Crucially, pat the chicken completely dry with paper towels; this is key to achieving a crispy skin. Once dry, lightly coat the entire chicken with olive oil, ensuring an even layer for a golden finish. Then, generously season the chicken, both inside and out, with herb salt. This initial seasoning penetrates the meat, infusing it with flavor. Place the prepared chicken into your air fryer basket.

Now, it’s time to cook the chicken in the air fryer. Set your air fryer to 190°C (375°F) and cook for 15 minutes to crisp up the top side. After 15 minutes, carefully flip the chicken over and cook the other side at the same temperature (190°C / 375°F) for another 15 minutes.
