Rinse the chicken drumsticks thoroughly under cold running water. To remove any gamey smell, marinate them with 2 Tbsp of mirin (or Cheongju) for about 1 hour. After marinating, rinse them again with water to remove the mirin and ensure they are well-drained by patting them dry with paper towels. This step is crucial for achieving a crispy exterior.

The total cooking time will be approximately 1 hour.
