Main Ingredients

  • 1kg Whole Pork Belly
  • 20 Cloves Garlic
  • Salad greens (a mix of leeks and onions is also recommended)

Red Wine Glaze

  • 1 cup Red Wine
  • 1 cup Rice Wine (Cheongju)
  • 1 cup Cooking Wine (Mirin or similar)
  • 8 Tbsp Soy Sauce
  • 4 Tbsp Honey

Cooking Instructions

Prepare the whole pork belly, whole garlic cloves, and salad greens. For the greens, a combination of leeks and thinly sliced onions works wonderfully and adds extra flavor.

Heat a pan over medium-high heat. Lightly coat a paper towel with cooking oil and use it to wipe the inside of the pan, creating a non-stick surface. Then, place the whole pork belly into the heated pan.

Sear the pork belly on all sides, turning it regularly, until the exterior is golden brown and beautifully crispy. Ensure you achieve a satisfying crunch on the outside while keeping the inside wonderfully tender and juicy.

Once the pork belly is perfectly seared on all sides, push the meat to one side of the pan. Pour all the glaze ingredients (red wine, rice wine, cooking wine, soy sauce, and honey) into the cleared space. Bring the sauce to a simmer, then add the whole garlic cloves. Continue to cook the pork belly, turning it occasionally, allowing it to simmer in the sauce until the glaze has reduced by about half and thickened. To serve, arrange the salad greens attractively on a serving platter, slice the glazed pork belly into generous portions, and spoon the rich, reduced wine sauce generously over the top. The vegetables, infused with the delicious sauce, are just as delightful as the pork itself!
